Red Potato Hash

red-potato-hashThis yummy breakfast side dish works with any meal, and is especially good with a couple poached eggs on top.  Upon request our world class chef, Pete, will use bacon drippings in place of butter to create the dish, giving it a little extra breakfast feel, all while reducing the salt content!  That is a win win!  Red potatoes,  and locally grown zucchini and summer squash are seasoned and sauteed to perfection to create a side dish that could be it’s own meal.  Try it as a part of a breakfast buffet, or as a side to your main course!
